As temps start to drop it is becoming the perfect time for a warm bowl of healthy chili. Not only is this recipe easy, only using one pot, but it is packed with fiber, lean protein, and vitamins & minerals. This recipe is one of our go-to meals to get through the cold months while still eating very nutritiously.
Throughout the blog, we’ve talked about the importance of fiber. This meal provides beans and pumpkin which are both packed with fiber as well as other important nutrients, making this healthy chili a perfect dinner option.
One-Pot Turkey Pumpkin Chili
Ingredients:
- 3 cloves of garlic
- 1 onion, diced
- 1 jalapeno, diced
- 2 tablespoons olive oil
- 1 pound ground turkey
- 1 can kidney beans
- 1 can black beans
- 1 can diced tomato
- 1 can pumpkin puree
- ⅓ c tomato paste
- 2 cups water
- For the seasoning
- 1 tablespoon chili powder
- ½ teaspoon paprika
- 1 teaspoon cumin
- ¼ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon black pepper
- 1 teaspoon salt (& to taste)
Directions
- Mince the garlic & dice your onion, then add garlic, onion, and olive oil to a large pot. Cook over medium heat for about 5 minutes
- Add your jalapeno and cook for another minute
- Then, add turkey & chili seasoning. Cook until turkey is browned and spices are fragrant
- Add your beans, tomato, pumpkin, and water– stir to combine then bring to a boil
- Cover and simmer for 30 minutes
- Taste and add salt/spices as needed per your preferences
- Serve with avocado, plain greek yogurt, cheddar, cheese, scallions, and/or cilantro
