Making Healthy Meal Prep Easy

healthy eating, meal prep, healthy food st louis

During the holiday season, prioritizing healthy meal prep can feel challenging. Not only are there endless leftovers, but the days are shorter, and there are more moments of indulgence.

Staying on top of your fitness goals can feel like an afterthought. We might think about waiting until January 1st to get back on it.

What if i told you it doesn’t have to be hard to make healthy eating approachable during these coming months? Eating nutritiously does not need to look like it does when we have more time and energy to invest. It can be simpler, balanced, and keep us from feeling like we’ve fallen off by the new year.

These three tips will help you stay on top of your health by making meal prep easier.

Use Your Crockpot

Making your proteins or entrees in a crockpot is a major time and energy saver while making recipes nearly fool proof. Try this crockpot shredded chicken that takes only a few minutes to prep and will yield a full weeks worth of protein.

    Make a Soup

Prepping a soup, like using your crockpot, is easy, low-mess, and can be packed with nutrition. This is also a great way to prevent wasting produce and proteins in your fridge. You can chop up nearly any and all veggies and add them to a pot with your favorite bone broth, grain, and protein. This veggie soup is a great way to prepare your vegetables for the week while also staying warm and not worrying about wasting any veggies.

    Double Your Dinner

One of my favorite ways to reduce the pressure of meal prep is simply making extra dinner each night for lunch the next day. This may help us to reduce stress during the work day when we have a nutritious, balanced meal ready to go. Try making salmon, sweet potato, bell pepper, onion, and mushrooms all baked in a foil packet in the oven. Making two will take almost no extra time and will be the perfect balanced meal to enjoy twice.
