Part of a healthy lifestyle is adding in more nutritious foods. This does not need to be a miserable addition. We don’t need to only eat steamed broccoli and raw kale daily. Adding in vegetables that we enjoy in ways that are most tolerable is how we can adhere to a healthy lifestyle long-term.
Vegetables are important for a myriad of reasons. These include micronutrients (vitamins and minerals), fiber, and feeling fuller with lower caloric density. Vegetables are loaded with important nutrients that can help us to feel our best physically & mentally.
If you’re struggling to eat your veggies, try one (or all!) of these five ways to eat more of them:
1) Put them in a smoothie
Adding spinach to a tasty banana & peanut butter smoothie can take post-workout nutrition up a notch. Blend frozen banana with spinach, milk, Greek yogurt, honey, and peanut butter to up your intake of greens.
2) Make a hummus
Roast some beets and carrots to blend with chickpeas, tahini, lemon, salt, olive oil, and garlic. Making an enjoyable spread with vegetables will help to increase nutrient density. Spread this hummus on a grainy bread or crackers.
3) Add some to your scrambled eggs
Starting the day with a few servings of vegetables helps to start strong! Chop up some peppers, onions, kale, and mushrooms and sauté them before cooking your eggs. When all your veggies are cooked down a bit, add a little salt and eggs. Scramble until eggs are cooked to your liking, add a little cheese, and enjoy!
4) Homemade salsa
Sauces can be a helpful way to increase vegetable intake. One way that we can add more in is with a simple homemade salsa. Roast quartered tomatoes, red onion, garlic, and jalapenos on a baking sheet until charred. When cooked, add to a blender with a little lime, cilantro, and salt. Blend and add to your favorite meals.
5) Try some new recipes
Vegetables can feel unappealing when it is the same bland preparation. Adding spices & ingredients that you enjoy can help to increase your vegetable intake.
