Three ways to eat more veggies this fall

As summer ends, we may start to crave heavier foods. We can stay on top of our vegetable intake while still enjoying delicious, seasonal dishes. Enjoying our lifestyle is very important as we work on making changes to our health.

Vegetables are incredibly healthy; providing fiber, micronutrients, and phytonutrients. Eating them helps to provide nourishment and energy while also keeping us full. Additionally, vegetables can taste good too!

Here are three ways to up your veggie intake this fall:

  1. Make a homemade sauce: when making pasta dishes, we may opt to grab a jar of tomato sauce. While this is convenient, making our own is a great opportunity to include more veggies. Cook your tomatoes with onion, garlic, mushroom, bell pepper, and zucchini to make a veggie packed sauce that is also delicious.
  2. Go to a farm stand: trying a new recipe and new local seasonal vegetable is a fun way to support our health, community, and make eating veggies more exciting. Try a seasonal squash with brown butter, sage, garlic, mushroom, and onion to pair with your protein.
  3. Make a soup: Soups are a great and delicious way to load up on nutrients with minimal prep. This makes it easy to have quick veggie-packed meals through the week. Use your favorite broth and add in a whole grain, your favorite veggies, some beans or chicken, and favorite spices.
