Easy Healthy Slow-Cooker Meal Prep

As the days get shorter, it seems that we have less and less time to tend to our health goals. Let’s make meal prep as easy as tossing some ingredients in a crockpot and forgetting about it altogether! While we’re also cooking up a crave-worthy, warming, nourishing meal. Try out this Moroccan Spiced Chicken, Chickpea, and Vegetable Stew. Not only is it delicious, but will provide a simple, nutritionally balanced meal.


This stew includes:
Chicken for lean protein

Chickpeas for fiber and plant-based protein

Sweet Potatoes for complex carbs

Carrots, Spinach, and Kale for loads of micronutrients

& delicious spices to bring it all together

Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 large sweet potato, peeled and cubed
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup low-sodium chicken or vegetable broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp ground cinnamon
  • ½ tsp turmeric
  • ¼ tsp cayenne (optional)
  • Salt & pepper to taste
  • 2 cups chopped kale or spinach (added near the end)
  • ¼ cup chopped fresh parsley or cilantro, for garnish
  • Juice of ½ lemon

Instructions

Layer the base: In your slow cooker, combine chicken, chickpeas, sweet potato, carrots, bell pepper, onion, garlic, diced tomatoes, and broth.

Spice it up: Add cumin, paprika, cinnamon, turmeric, cayenne, salt, and pepper. Stir gently to combine.

Cook low and slow: Cover and cook on low for 4–6 hours until chicken is tender, vegetables are soft, and flavors meld beautifully.

Add greens: About 15 minutes before serving, stir in kale or spinach and cover to let it wilt.

Finish with freshness: Remove from heat, stir in lemon juice, and sprinkle parsley or cilantro on top.

Serve warm: Perfect on its own, or over brown rice after a challenging workout when appetite is higher!
